Sandwich Bread Recipe
Servings: 2-3 loaves
2 hours to prep & rise both times
30 min to cook *
Notes:
In the winter cooler months I typically preheat my oven to 350 before my first rise to let my dough rise (1st & 2nd time) covered on my stove top. The summer in Texas I can typically leave on the counter and it rises just fine.
Also if not milling your own wheat berries, used unbleached flour!
2 1/2 tbsp active dry yeast
3 cups warm water
1 tbsp sugar
2/3 cups honey
4 tbsp salted butter
1 tbsp salt (i use pink Himalayan salt)
7 cups flour (may need a little extra)

in a bowl add you dry yeast, sugar and warm water. Let sit about 5 minutes until foamy ( has to get foamy or your yeast is not active anymore)
melt butter in small bowl
add salt, butter & honey into yeast mixture until just combined
add flour in and mix in slowly a cup or two at a time ( I use a mixer with a dough hook) let kneed until pulls away from bowl on sides, might need to add a little more flour here depending so it is not sticky
place dish towel over the top of the bowl and let it rise in a warm place until doubled, about 30-45 min (may need 1 hour in winter, depends on the temperature, sometimes I turn my oven on and set the bowl on top so it will be in a warm spot)
grease pans well or line with parchment paper
after dough has doubled in size, divide dough in to 3-4 loaves depending on pan size
roll dough out flat & fold it into a loaf shape, you do not want a bunch of air pockets on sandwich bread that is why you roll it out, don’t worry it will rise again
after shaped place in bread pans & let rise a second time for 30-45 min. Place a dish towel over the top.
preheat oven while dough is rising a second time at 350
bake until golden brown about 30 minutes,* but keep a close eye, as different ovens cook differently!
As soon as you take the bread out of the oven carefully flip it over and take it out of the bread pan while it is still hot and rub salted butter on the top of the bread.
enjoy while it is still warm!!
